PRACTICAL COOKERY

Aimed at those working in a catering enviroment such as a Hotel, B&B, Guest House, Cafe etc.

It provides a series of practical sessions for aspiring chefs to develop their cooking techniques.  A variety of food areas such as soups, sauces, desserts, fish, meat, healthy options, knife skills, food safety, food hygiene and Health and Safety.  This SQA certificated course could be available in various venues in the area subject to demand.  It is designed to be delivered in a variety of formats eg 4 x full day sessions or 8 x half day sessions spread over a number of weeks. 

Previous sessions have included:

Prepare, cook and finish basic soups
Cook and finish basic fish dishes
Cook and finish bread and dough products
Prepare and cook basic cold and hot desserts.
