Professional Cookery Level 2 SVQ

Course Description

This Level 2 SVQ is designed for anyone in full time employment, who is involved in a restaurant kitchen.
The qualification consists of 14 units, 3 of which are mandatory and the other 11 are selected by the individual candidates.  It has specialist units relevant to all aspects of cookery, including

* Prepare fish for basic dishes
* Prepare meat for basic dishes
* Prepare game for basic dishes
* Cook & finish basic vegetable dishes
* Prepare, cook & finish basic soups
* Prepare, cook & finish basic pastry products
* Prepare, cook & finish basic desserts
* Set up & close kitchen
* Contribute to effective teamwork
* Prepare shellfish for basic dishes
* Cook & finish basic poultry dishes
* Cook & finish basic shellfish dishes
* Prepare, cook & finish basic pasta dishes
* Prepare, cook & finish basic healthier dishes
* Complete kitchen documentation
* Order stock

The majority of the evidence for the qualification will be provided through visual observations carried out in the workplace. The candidates will also have to show that they have appropriate knowledge and understanding of their job.

Entry requirements

You must be in year round full time employment and working in a kitchen.

Qualifications

SVQ Level 2 in Professional Cookery.

Attendance

This course is completed in the work place. You will also have to attend various 1 day workshops including health and safety, customer care and food hygiene. It is expected that to complete a Level 2 SVQ you will need 18 months.

Start Date and Venue

The SVQ in Professional Cookery can start at any time and it takes places in your current work place. At present we are able to cover the Skye and Lochalsh area.  For more information about this qualification please contact Jenny on 01478 611310.

Progression

This qualification could help the candidate progress into a role with more responsibility. They may also be able to progress onto the Professional Cookery Level 3 SVQ.

Cost

We provide you an evidence portfolio and all the documentation required to help you complete the qualification. We also provide you with a textbook and access to a variety of different resources.

Candidates must be in full time employment and may be able to secure funding from Highlands and Islands Enterprise, especially those between 16-19.
